With consumers becoming more concerned about how their food is produced, the Waipawa Butchery saw an opportunity to supply local meat from a farm 15km away and it has not looked back. Two years ago, owners Duncan Smith and Annabel Tapley-Smith started supplying meat from their own farm on Patangata Station for customers to enjoy. Tapley-Smith who comes from a marketing background said she recognised the opportunity to sell their sheep and beef to the directly to the local market and chefs nearby from restaurants such as Craggy Range. She says that fronting up to customers with what they want has been the driver behind their success as well as providing a high quality produce for lower prices than supermarkets. Because of its transparency and traceability, the butchery experiences a steady stream of customers in its shop and local farmer’s market stores throughout Hawkes Bay.
