Salt of the Earth, an Israel-based ingredients company, said its Mediterranean Umami product could decrease sodium in processed meat by 25-33 percent. The company has seen sales of the ingredient double in the first half of 2016 and has partnered with top Israeli meat processors to meet strict salt reduction regulation. The ingredient is a combination of vegetal concentrates, extracts and natural sea salts. The UK-based Food Standards Agency, USA’s Food and Drug Administration and the Israeli Ministry of Health have recently issued limits for salt content in meat, and Salt of the Earth claims it can help companies meet these limits without affecting taste.
