[30 August/Food Navigator] Accelerating consumer trends such as veganism and environmental concerns are bringing complexity to the food industry but also plenty of opportunities, according to Stefan Palzer, Chief of Technology at Nestle. Mr Palzer stated how plant-based nutrition is rapidly growing due to changes in consumer thinking. Another one of his predictions for the future of food is that it needs to be instagrammable and therefore aesthetically pleasing, along with how innovation and variety is more important than ever. Mr Palzer reports that it is crucial for companies to address their carbon footprints, to collaborate with others that are top in their fields to find solutions and finally that affordable, healthy food needs to be made available globally and address deficiencies such as low iron and b12, often found in vegans.
