DuPont Nutrition & Biosciences have launched a new naturally sourced stabiliser, the Grindsted Gellan veg 200, to its portfolio of ingredients. According to DuPont, the product responds to the trend in millennials towards plant-based products. The product is produced by a natural bacteria during the fermentation of bio-based raw materials. The bio-based materials used in the fermentation process include sustainable sources of nitrogen and carbon. The product can be used with a range of plant-sourced raw materials to make oat and almond milk. The gum can also be used to make multi-protein plant-based beverages. It is reported that six in ten American consumers are increasing their consumption of plant-based food and beverages.
